of an engineer as his moniker.
But he has the mind of an architect
and the heart of an Italian
chef. And his appetite, skill,
and love of good food have
made Amelia’s Trattoria in
Cambridge a hidden gem that
will celebrate its tenth anniversary
in December 2009.
Delio’s
culinary career began right
after graduating with a degree
in Architecture and Construction
Management in 1997. Without
hesitation, though, he immediately
headed to, of all things, a
stove. Here he successfully
worked side-by-side but never
in the shadow of his parents,
rather than finding his place
on a construction site. But
he’d been making homemade sausages
since he was thirteen and knew
fresh pasta as well as he knew
blueprints, so it was hardly
a stretch or a surprise. Indeed,
the Susis have been a venerable
food family on the local landscape
for years.
But it’s the
Trattoria, which began as an homage
to his mother Amelia - who taught
him from the heart and from the start
- that has become Delio’s passion
and an off-the-beaten path destination
for good Italian food. As a chef,
he is known for his deft hand with
gnocchi, creating meltingly lush
little pillows, and other handmade
pastas, as well as his great skill
with meat – and anything he makes
with braised short ribs is worth
ordering.
Delio works
with his wife Rebecca, who runs the
backbone of the business. And his
first child, daughter Amelia, is
a little “mini-me” of her father
and the love of his life. He also
loves drumming and jazz and funk
music. But only his newest endeavors,
redesigning the Trattoria’s interior
and being a father, can compete with
his true love of cooking and eating
great food.
